1 2/3 cups sugar
1/2 cup soy flour
1 cup soy oil
1 teaspoon cinnamon
4 eggs
1 teaspoon salt
1 16-ounce can solid pumpkin
1 teaspoon baking soda
11/2 cups flour
2 teaspoons baking powder
Preheat oven to 350F. Spray 10 x 15 x 1 inch pan with non-stick spray. In large bowl, combine sugar, eggs and oil. Add pumpkin and mix thoroughly. Combine flours and spices and stir into pumpkin mixture. Pour batter into prepared pan. Bake for 25-30 minutes, or until tester comes out clean from middle of pan. Yields 24 to 36 bars.
Cream Cheese Frosting
1 3-ounce package light cream cheese,
1 teaspoon vanilla
2 cups sifted powdered sugar
1/2 cup Parkay margarine
1/2 cup chopped pecans
Combine all ingredients except nuts, and mix until smooth. Frost when bars are cool. Sprinkle with nuts.
