3/4 cup warm water (1050 - 115F).
1 package rapid-rise dry yeast
1 teaspoon sugar
1/4 cup grated fresh Parmesan cheese
2 cups all-purpose flour
3/4 cup soy flour
1 teaspoon seasoned salt
1 teaspoon garlic powder
11/2 teaspoons dried Italian seasonings (basil, thyme, rosemary)
2 tablespoons soy oil
1/4 cup grated fresh Parmesan cheese
Dissolve yeast and sugar in warm water; stir to dissolve. Place 1/4 cup Parmesan cheese, salt, garlic powder, Italian seasonings and flours into food processor bowl. Process 4-5 seconds. With processor running, slowly add yeast liquid through the feed tube until dough forms a ball, about 45 seconds. Dough will be slightly sticky.
Place dough in bowl coated with a small amount of soy oil, turning dough to oil top. Cover. Let rise in warm place until double in bulk, about 45 minutes. Punch down. Roll out on floured surface into 12-inch circle. Brush with remaining soy oil. Let rise 15 minutes. Bake in 375F oven for 18-20 minutes. Sprinkle with remaining cheese. Place back into oven for another 3 minutes or until cheese melts. Yield: 6 servings.
Hint: Add your favorite sliced vegetables and additional cheese for a gourmet style pizza. Add different herbs for a change of flavor.
