OSU to receive $30,000 USDA grant for very small plant HACCP assistance

The Ohio State University is one of five land grant universities awarded grants from USDA's Food Safety and Inspection Service to provide technical training and information to very small meat and poultry plants in order to prepare then for HACCP implementation in January 2000.

"This is a model of cooperation," said Agriculture Secretary Dan Glickman. "USDA is helping these universities to help very small meat and poultry plants meet the tough standards of our new, prevention-oriented inspection system."

This $30,000 grant reflects USDA's confidence in Ohio State University Extension's HACCP assistance program. The funds will be used to expand our program. Developments will include:

  • Completed HACCP plans for all products made in the OSU Meat Lab will be made available to those who attend HACCP training sessions.
  • The Meat Lab will host training sessions where individuals can observe these HACCP plans in operation.
  • A low-cost training package consisting of a videotape and manuals will also be developed. The video will feature demonstrations (filmed in very small plants) of CCP monitoring, record keeping, product lot indentification, corrective action and verification procedures, pre-shipment reviews and more. The manual will follow the videotape and include examples of record keeping forms and instructions for managing paper flow.

    The other grant recipients are the University of Tennessee Institute of Agriculture ($19,500), Pennsylvania State University ($18,193), Southern University and A & M College ($16,986), and Iowa State University ($15,000).
