Animal Sciences 355.01 Principles of Meat Science Course Syllabus
Course Objectives: Students in this course are composed of Animal Science, Food Science, Food Business, Ag Business, Ag Education, and other majors. Because of this diversity in majors, several objectives will be met to accommodate different lifetime goals.
Upon completion of this course, … 1. You will, as a present or future shareholder in the meat animal industry, be able to make sound decisions which impact the quality, safety, and nutritional value of the industry's ultimate product.
2. You will, as a present or future shareholder in the food industry, be able to make sound decisions which impact the production, processing, and consumption of meat.
3. You will be aware of the vast opportunities in meat science and the meat industry, and you will have a broad-based knowledge to enable continued study in meat science.
4. You will, as a consumer of meat, be able to make decisions regarding purchasing, handling, and preparing meat which will heighten the safety and satisfaction of your eating experience.

Office Hours: I wish to help you meet the objectives of this course or any of your personal objectives in any way that I can. I do not keep scheduled office hours, but I try to be easily accessible. If you want to be sure of seeing me, set up an appointment by calling. Otherwise, stop in any time. I am usually in my office or in the Meat Lab (rooms 123, 143, 149, 23).
Text: The Meat We Eat, 13th Edition (1994, Interstate Publishers) Romans, Costello, Carlson, Greaser, and Jones Grading: Your grade will be based on your performance on 5 exams. The 5 regular exams will be non-comprehensive and will be composed of a variety of question types which may include multiple choice, true/false, matching, short answer, essay, and lab practicums.
Attendance: Attendance will not be monitored; however, attendance is strongly encouraged to get the full benefit from the course. Although attendance does not directly affect your grade, attendance is very crucial to your grade because 15-35 points of exam material are presented during each class period.
Makeup Exam: A comprehensive written exam will be given, if needed, during the final week of classes for any students who have missed one of the previous exams or will miss the final exam. Students who miss an exam for a "university-approved" trip will be given the opportunity to take a non-comprehensive exam similar to the exam taken by the rest of the class at a time arranged with the instructor.
Graduating Senior Final: There will be no Graduating Senior Final. Graduating Seniors will have their grades based on the first 4 exams (500 points) using the same grade percentage break-down as shown above.
Academic Misconduct: Any suspected cases of academic misconduct will be reported to the Committee on Academic Misconduct. Faculty Rule 3335-5-487 states "(The term 'academic misconduct' includes all forms of student academic misconduct wherever committed; illustrated by, but not limited to, cases of plagiarism and dishonest practices in connection with examinations.) Instructors shall report all instances of alleged academic misconduct to the committee."
